Regional & Seasonal
Regionality and seasonality are especially close to our hearts. When selecting our suppliers, we focus on high-quality regional products that are crafted with care and dedication. This philosophy is also reflected in the preparation of our homemade breakfast specialties.
Our eggs come from the Poseritz Egg Farm, while our dairy products are sourced from the Rügener Inselfrische dairy. We are particularly proud of our homemade sea buckthorn quark, prepared with fresh quark from the dairy. The honey we serve comes from Briese Honig in Ummanz on the island of Rügen, and the rapeseed oil used to refine our freshly prepared salads is produced by Rügener Rapsöl in Rambin.
For extra freshness, we also use herbs from our own herb garden. The apples for our homemade jams come from our father’s and grandfather’s traditional orchard in Kassnevitz, and the apple juice pressed from them is produced at the Bobbin cider mill. In this way, you can experience the authentic taste of the region – served directly on your plate.
